Time on oak ensured structural balance was achieved to create a wine with elegance and richness. Malolactic fermentation followed immediately after the wine was pressed off skins. Once the main ferment was complete, the wine was racked off the heavy lees then matured for a further six months on lees filling out the palate and retaining the fruit-driven focus. The wine was bottled just over one year after picking. |
