Notes | WINEMAKING: Four Sauvignon parcels were selected from our home-vineyard blocks and one from Twin Rivers just across the river for this wine. e parcels were machine harvested over a two-week period that began late March. e spread of picks allowing us to capture a spectrum of flavours to work with at blending time. But back to harvest… we have found machining to be the best technique for harvesting many of the aromatic white varieties and most defnitely Sauvignon Blanc. We like to start early, preferably before dawn, removing the fruit quickly while the temperature is cool. is helps minimise enzymatic oxidation and preserve aromas. Grape-skin contact with juice during transportation and processing at the winery contributes to the concentration of flavour and the phenolic structure obtained in the juice. We use a quick but gentle press cycle to de-juice, and the juices are then cold settled for several days to achieve low solids prior to ferment which promote crisper and more pure varietal aromas. Each parcel of juice is matched to and inoculated with a different Sauvignon yeast. These are chosen for the attributes they will enhance in the individual juices. e ferment rates are tempered with cooling - again to preserve aromatic compounds. When only a dash of sugar remains and we deem the wine balanced, the ferment is arrested by chilling. A small volume of wine that’s destined for the final blend undergoes stirring on lees to enhance texture and mouth-feel. is creates a powerful blending component and an important brush stoke to our wine style. In late June this year the winery team set about grading the individual wines and trailing all the possible proliferations of this wine! Once finally agreed upon the wine was blended and finished for the bottling in the second week of July. TASTING NOTE: Starbright and a delicate pale lemon-green in colour, this wine has a pronounced nose which is at once fruity and herbaceous.
