| Notes | This Bridge Pa Merlot was a blend of eleven batches. Each batch was of varying clones, all picked at their optimum time. The batch size varied from 4T down to 1T ferments. Fermentation management varied with each batch to create complexity and balanced tannin structure. All batches were aged separately in predominantly seasoned French and American oak – 15% new. After eight months of maturation the final blend was constructed and allowed to continue ageing for another two months. Sensory Evaluation: Colour: Very dark ruby-red colour with slight purple hues, Aroma: The nose is well proportioned with tightly bound aromas of ripe, boysenberry and Black Doris plum fruit aromas forming a concentrated core. The fruit is fresh and attractively primary in expression.
